About Black Forest cake
Its name is derived from the mountain range of southwestern Germany. The name of this cake is not directly derived from the Black Forest but also from the specialty liquor of that region, Schwarzwalder Kirsch (Wasser) which is distilled from the tart of cherries, and we are using it in our recipe too. When this ingredient is mixed with some layers of chocolate and whipped cream it gives a distinguishing cherry and alcohol flavor. Earlier it was just a simple dessert. But now, it has gained much popularity due to its distinctive taste. People even started to make it as a cake without Wasser. If you want, you can skip it too. And did you know, Black Forest Cake is the fifth most liked cake all around the globe? Let’s just get into it!
Black Forest Cake Recipe
- 1 and ¾ cups or 220 grams all-purpose or Maida
- ¾ cup or 65 grams of cocoa powder
- 1 and ¾ cups or 350 grams of sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- ½ cup or 120 ml oil
- 2 large eggs
- ¾ cup or 180 grams cream
- ½ cup or 120ml buttermilk
- 3 teaspoons vanilla essence
- ¼ cup cherry liquor (sold as Kirsch or Kirshwasser)
- 1 can of sweet red cherries
- 350 grams heavy whipping cream
- 50 grams of butter
- 150 grams of Icing Sugar
- 200 grams dark chocolate compound
- ¼ cup of whole milk
For making the chocolate sponge cake
Step 1: Take a large bowl and mix all the dry ingredients for the chocolate sponge cake in it. Add all-purpose flour, cocoa powder, sugar, baking powder, and baking soda in the bowl. Mix everything properly with a whisk.
Step 2: Then break two eggs in another bowl and whisk them nicely. After that, add oil, cream, buttermilk, and vanilla essence to it. Beat everything together until combined.
Step 3: Now, you need to combine the dry and wet ingredients together. Therefore, pour the dry ingredients into the wet ingredients. You should beat it with an electric hand blender if you have one otherwise, you can also use a simple whisk. This should work just fine. Beat it until it forms a batter that has a ribbon-like consistency.
Step 4: Preheat the oven at 180 degrees for 10 minutes. Meanwhile, take a baking dish and grease it with butter. Then pour the chocolate cake batter into it. Tap it gently to remove air bubbles.
Step 5: Now start the baking process. Just toss the batter in the oven and bake it at 180 degrees for 20 to 30 minutes. When the time is up, carefully take out the baking dish. Check if it is baked or not by simply inserting a toothpick in it. If it comes out clean it means it is cooked. If not, cook for another 5 minutes
Step 6: Let it rest for about 10 minutes. Then take out the cake by flipping it upside down and lightly tapping the bottom. The cake will easily come out. Keep it aside to cool down. Our chocolate cake is ready.
For making the cherry syrup
Step 1: Take a small saucepan and add a can of cherries leaving a few for garnishing. Then pour the cheery liquor and some water into it.
Step 2: When it starts boiling, mash the cherries with the help of a spoon. Simmer it for a few minutes or until it is reduced in half. Then your cherry syrup is ready.
For making the whipped cream
Step 1: Take heavy whipping cream in a big bowl and add 50 grams of melted butter to it. Then take another bowl which has to be bigger and fill it with ice. Then keep your bowl of cream and butter over the bigger bowl.
Step 2: Now take an electric blender and start whipping the cream. Start whisking it at the low-speed setting for 3-4 minutes. Then gradually increase the speed.
Step 3: Keep whisking it until it forms soft peaks. Now take icing sugar and add it to the cream and whisk it for 3-4 minutes again at a high-speed setting. Add vanilla essence again and whisk it again for a few minutes. Your whipped cream is ready.
Note: When you are whisking the cream it should be cold. It will prevent it from splitting.
For making the chocolate ganache
Step 1: Melt the chocolate compound in a microwave or a double boiler method on the stove. Leave some to make chocolate shavings for garnishing.
Note: You just need to heat it until it melts. Do not boil it.
Step 2: Place a saucepan over medium heat and add 2 tablespoons of butter and ¼ cup of whole milk to it. Let it simmer for some time. Turn off the flame when you see small bubbles appearing in the milk.
Step 3: Pour the hot milk mixture into the melted chocolate. Give it a nice mix until it is glossy and smooth. Your chocolate ganache is ready!
Bring everything together
Step 1: Take a flat long knife, and divide the chocolate sponge cake into three equal parts very carefully. Then, take a cake stand and put some cream over it. Now take the first layer of chocolate sponge cake and place it over a cake stand.
Note: We put the cream over the stand so that cake does not stick to it.
Step 2: Now, brush some cherry syrup over the first layer of chocolate cake. Then take whipped cream which we have made earlier and place some of it over the cake and spread evenly all around the cake. Now take the second part of the cake and put it over the whipped cream layered cake. Brush this one also with the cherry syrup. Now, place some cream over it and spread it evenly. Then, take the third part of the cake and put it over the whipped cream layered cake. Brush this one also with cheery syrup. Place some whipped cream over it and spread over it as well.
Step 3: Now take the whipped cream and apply it all around the cake. Cover all around the cake and make sure you are giving a smooth look to it. Take your time with it and coat your cake twice for a finished look.
Step 4: Then take a peeler and chocolate compound and make shavings of the remaining chocolate compound.
Step 5: Pour chocolate ganache on top of the cake. Spread it over the cake and let it drip gently down the sides. Top the cake with whole cherries at the edge, and add chocolate shaving in the center. Also, add chocolate shaving all around the cake. Refrigerate for at least 30 minutes before slicing and serving.
Note: Designing your cake is all up to you. How you want to see your cake depends on you.
Step 6: Take the cake off the stand very gently and place it on a plate. The delicious Black forest cake is ready. You can keep this mouth-watering cake in a refrigerator for 3-4 days and enjoy eating.
Some helpful tips:
- While making Frosting keep in mind to do this in a cool place or maintain the cold temperature otherwise it would be difficult to do the frosting on cake.
- If after whipping the cream it doesn’t get dense in consistency try to place it in a refrigerator for 1-2 hours and whip it again.
- Do not pour the hot chocolate ganache over the cake. Let it cool down a little bit so that it is not too hot but still has a flowy consistency.
- You can skip the cherry liquor to avoid alcohol. Replace it with the boiled mixture of honey and water.
