As you all know Christmas is just around the corner and everybody is so excited about it. At Christmas, you can miss and avoid everything but the cake. During this lockdown, a lot of recipes were invented and some of them were really innovative. Cakes are something that everybody loves to have and enjoy this delicacy. The reason behind so much love for cakes is, there are millions of cake recipes and everybody loves a different cake. There are also people who like the same flavor of cake but in a different style. Cakes are a very flexible dish that you can add your own flavor, you can prepare it as per your choice, and voila, you have a new recipe.

The mixed fruit cake version is the most common version of the cake. If you want to make a fruit cake what’s better than mango cake. Mangoes are commonly loved by everyone so if you are planning to make a cake that everybody enjoys then you should go for mango cake.
Mango cake is very easy to make and very delicious as well. It takes very little time to make with a very few amount of ingredient and could be made at any point in time, or whenever you feel like having it. This cake is an eggless cake. So, if you are a vegetarian then don’t worry you can enjoy it too. This mango cake can be made without an oven also, for those who don’t have an oven, I’ll mention side by side how to make it without an oven. You just need a few ingredients that are essential to make a cake, and that’s all. So, without wasting any further time let’s bake a mango cake.
Ingredients Mango Cake Recipe
- Refined Flour – 1 ½ cup
- 1 big sized mango
- ½ cup Sugar
- 1 cup milk
- ¼ cup Refined oil/ butter
- ½ cup powdered sugar
- 1 ½ teaspoon baking powder
- 3-4 drops of vanilla essence
- ½ teaspoon Salt
Step 1: Take a big-sized mango, and peel it off. Take out all the pulp, and dispose of the seed. After this, pour the mango pulp into a mixture jar and make a puree. Note: Don’t add water.
Step 2: Once done, take a medium-sized pan and put it on the low flame. Pour the mango puree in the pan with half a cup of sugar into it.
Step 3: Cook the mixture by stirring it continuously for 5 minutes. You’ll notice that the mixture is getting translucent. Once the mixture becomes translucent, turn off the flame and let it cool.
Step 4: Take a cake tin of 6” in diameter and grease it with 1 teaspoon of refined oil. Take two tablespoons of refined flour and dust the tin well from inside. Remove all the excess flour.
Step 5: Now let’s make the batter for the cake. Take a fresh bowl and add ½ cup of powdered sugar, ¼ cup of butter, 3-4 drops of vanilla essence, and a cup of milk. Mix it well.
Step 6: Add 1 ½ cup of refined flour, 1 ½ cup of baking powder, and the mango pure that is left to cool aside to the mixture and mix it well with a whisk. Avoid lumps, and make it smooth so that the cake becomes fluffy.
Step 7: Pour the mixture into the cake tin and tap it so that there are no air bubbles left. Put the tin inside the oven and turn the oven to 180 degrees Celsius for 40 minutes.
Step 8: After 40 minutes take out the pan and let it cool, then take a plate and split the tin. Tap it 2-3 times and the cake is out and ready to be served.
Tips for people who don’t have an oven!
If you don’t have an oven pre-heat a pan placing a stand or a steel plate inside it, covering the pan with a lid. After preheating for 5 minutes place the cake tin inside it and cook it for 35 minutes. After 35 minutes check the cake with a toothpick, if it comes out wet, then cook it for another 10 minutes.
