Origin of Milk cake
Milk cake was first sighted in 1911 and since then it continued to expand its popularity due to its simplicity. Simple yet so delicious, it has a white part at the top and a brown one at the bottom that makes it look more mesmerizing and delicious. It is prepared by cooking full cream milk until it gets thick and dense. You can make it for Diwali, Holi, new year, birthdays, or any other occasion. A traditional preparation made with milk makes this dessert difficult to resist. It is one of the special sweet dishes of Western Uttar Pradesh and Haryana. Everyone loves it the most. Milk Cake Recipe
- Full cream milk-2.5 liter
- sugar- 1 cup (250 grams)
- Ghee-½ teaspoon
- Cardamom powder- 1 teaspoon
Step 1: Take milk in a vessel that has a heavy bottom and place it on flame for simmering. Simmer the milk on high flame first for a few minutes.
Note: Keep stirring the milk continuously to avoid burning. You need to cook it until milk remains one third in quantity. When the milk remains one-third reduce the flame.
Step 2: Now to make the milk grainy add 3 to4 tablespoon lemon juice into it and mix well. Leave it as it is for half a minute on low flame. Do not stir the milk at this point. You will notice that the milk starts curdling and forming milk solids.
Step 3: After the half-minute is over, stir the milk again constantly and cook until it gets denser in its consistency. Remember to keep the flame low. When the milk gets thick and grainy in texture, add sugar, and keep stirring it constantly.
Step 4: Cook until it starts getting thick and turning brown in color. At this point, you will notice that it has started giving a great aroma of flavors. This suggests that the mixture is ready. Now, reduce the flame and stir constantly. Now add green cardamom into the mixture and mix well.
Note: For making cardamom powder, peel the cardamon, take out seeds, and ground it with mortar pestle to make a fine powder.
Step 5: Then stir is for some time until the flavors of cardamom get mixed properly. When the mixture gets thick, turn off the flame. Let it rest for a while and cool down.
Step 6: Meanwhile take a small vessel for setting the milk cake and grease it nicely with some ghee. Then, transfer the mixture to the vessel and cover it nicely.
Step 7: Keep aside the vessel to set. Within 24 hours milk cake sets completely. To take out the milk cake from the vessel, run a knife all around it and reheat the vessel over the flame for 5 to 6 seconds to separate it from the vessel. Now flip the vessel over a plate, tap on the top to separate the milk cake.
Step 8: Milk cake is ready, cut it into chunks with any shape or size as you like. Mouth drooling cake is ready to serve & eat.
Note: Don’t worry if the color of the milk cake is a little dark from the inside. This happens because the milk cake continues to cook when kept to set.
Some helpful tips:
- It is important to stir the milk continuously while simmering. Stir it well, by bringing the spoon to the bottom of the vessel so that milk doesn’t stick to the bottom.
- When we use lemon juice, milk gets grainy in texture. This is when the milk starts curdling and forming milk solids.
- You need to have a lot of patience and plenty of time for making the milk cake. Make sure that after adding sugar, you cook the mixture until it gets thick in its consistency. Only then the cake will set appropriately.
- It takes 24 hours for setting the milk cake.
- For making 800 to 900 grams of milk cake it takes the time about 90 minutes including all preparations.
